Honey and Malteser(s) – A Cupcake Delux!
Honey, Malteser(s) and cream cheese, all captured into one delectable cupcake, must be as close to sweet heaven as you could possibly get.This is not a cupcake for a sissy, you have to be able to take “sweet” like a man. No pussy-footing around this cupcake. You have to grab it, look it in the eye and
eat it! Every creamy ounce of it, just do it! In my house we have a saying: “just NIKE it!” You may need a glass of milk or a very strong espresso to wash it down, but it will be worth every ounce of its sweetness.
Where I got the idea to use these ingredients in one cupcake, heaven knows. I told you before that I wake up with a recipe, well this was one of those recipes.
I have to say that I have always had a thing about Malteser(s) and for those of you who do not know what a Malteser is, it could be one of two things, it could be a fluffy, cuddly companion dog that thrives on love and attention or it could be a delicious, round chocolate ball with honeycomb on the inside. I think it is safe to say that I chose the latter for this recipe and it worked like a charm! What you will end up with is soft vanilla sponge with little nuggets of chocolate and honey comb, topped with honey infused cream cheese frosting and (if you can bear more) a drizzle of honey for good measure!
Honey and Malteser(s) cupcake with Cream Cheese Frosting
2 cups (200gr) Cake flour
125g Butter, Room Temperature
2 tbsp honey
2 eggs ( I always use jumbo)
½ tsp Salt
2 tsp Baking Powder
1 tsp vanilla extract
1 packet of Maltesers or Cadbury Whispers- crushed
Pre-heat oven to 180C. Place all ingredients, except the Maltesers in your mixer and beat until the batter is light and fluffy. Fold in the crushed Maltesers. Spoon into cupcake holders and bake for 15-20 minutes or until a knife or wooden skewer comes out clean. Cool
Honey-Infused Cream Cheese Frosting
200gr cream cheese – room temperature
5 tbsp butter – room temperature
2 tbsp honey
2 cups icing or powdered sugar
Beat butter and cream cheese until it is light and fluffy. Gradually add the sugar and keep beating the mixture. Fold honey in last. Pipe onto the cooled cupcake. Finish of with more crushed Maltesers and a drizzle of honey!
