Rustic Tomato and Mozzarella loaf

While making this Rustic Tomato and Mozzarella Loaf, I had no idea just how delicious it would turn out to be. It really surpassed my wildest expectations! With all the desserts that I have been posting lately, you might think that is all we eat here at My Easy Cooking HQ, but we have been feasting on fresh fruit, salads and the odd braai here and there.
We are extremely busy at the moment and my time for cooking is very limited, but that does not mean we have to scale down on what is good and healthy for us to eat. This loaf pushed on all the right buttons….
it was packed with flavor, easy and fast to make, filling and I think kind of sexy too! I have made many of these stuffed loafs before, like this  Supper in a bundle or this Panzanella in big or small format and my family loves eating them  maybe because there is no polite way of eating this kind of food, it is best to just tuck in! My two pennies worth of advice about this delicious loaf of bread is that you have to start with good ingredients to get good results and that this particular bread must be eaten straight from the oven to enjoy the gooeyness of the melted mozzarella.

Rustic Tomato and Mozzarella Loaf

Ingredients

1 round farm loaf – day old is good
about 400gr small tomatoes -washed and halved
about 500gr Bocconcini
5-6 whole anchovies
1 small onion slice thinly
olive oil
fresh thyme or oregano
salt/pepper
½ cup pitted black olives

Preheat oven to 180C. Cut the cap of the farm loaf and remove the inner soft bread, leaving some “flesh” around the inside, because that is the part of the bread that will absorb all the flavor. Now mix together all the other ingredients like you would be making a salad. Season well and pour all of it into the loaf. Place the lid back on and pop the loaf on a baking tray and straight into the preheated oven. Bake a for a good 30-40 minutes. It is ready to eat once the inside is piping  hot and the mozzarella has melted. Remove from the oven, place in the middle of the table with plenty of napkins and tuck in!!!
