Cheesecake Recipe for Happy Holidays!
It seems as if everyone is on holiday already the beaches and shops here in Cape Town are overflown with visitors and locals looking for a little fun time after the hard labor of 2010. We still have a few things to round up before we can go on leave so as promised a quick dessert for you to try.
This recipe is for 1 person, but you can make as many as you like and that is why this is such a fabulous recipe.
Minimise your time in in the kitchen even more, by keeping some ready made biscuit crumbs in the freezer…..so are you ready…..15 minutes, let’s go! Here are a few things you can keep as stock items in your fridge so that you can make this dessert at the drop of a hat.
Easy Cheesecake Recipe
Ingredients
2 digestive biscuits
10gr soft butter
1tsp golden or maple syrup
juice and zest of ¼ lemon
100gr mascarpone cheese or cream cheese
1tbsp icing sugar
fresh fruit or a fruit coulis of your choice.
Crush the biscuits and mix with the soft butter and syrup. Spoon the mixture into one small metal food stacking ring and press the mix on the bottom of the mould. Fold the lemon juice, zest and icing sugar into the cheese, being sure not to over mix, as this will cause the mixture to split. Spoon the cream cheese mix into the ring and use a palette knife to press the mix well into the mould. This is important to avoid air gaps. At this stage you can leave it in the fridge until you are ready to serve. Remove the ring with a hot cloth or blowtorch. Place the cheesecake on a serving plate and decorate with fresh berries, fruit or pour a fruit coulis over the top.
