Ciabatta with Rocket, Black Mission Figs, Prosciutto and Goat’s Cheese
Remember our virtual trip to Thailand, well today we are off to Italy, because when I think Italian food, I think…….fresh produce, quality ingredients, sexy food etc! I think every foodie dreams of a small deli somewhere in Italy, selling the most delicious meals for half of the year that they are NOT on vacation.
SO for today…allow me my silly little dream( My husband thought the lunch was great!) As I have already said, when making these kind of sandwiches, the freshness and quality of your ingredients are key elements that you just have to get right!
1 small ciabatta made with wild yeast ( For those of you living in Cape Town, do vist the Coimbra Cafe in Claremont for the freshest breads and confectionary)
4 Black Mission figs
fresh rocket – from my garden
4 slices of goat’s cheese
4 slices of Prosciutto
Cracked Black pepper
farm fresh butter
Cut the ciabatta in half and butter. Cut a criss-cross on each fig and press out with your finger tips. Wrap the prosciutto around the figs and put a slice of the cheese in each fig. Wash the rocket and place on the bread and then place the figs on the rocket. Serve with balsamic cream drizzled over the top!
