Let’s get stoned ….with flambe Apricots, hazelnuts and dates!
Stone fruits are in season now and the markets have an abundance of prunes, peaches, nectarines and of course apricots… The other day I found apricots at a reasonable price and bought a few just to try out the first of the season.
The apricots were plump, juicy and very sweet. I immediately thought of ways to make use this humble little fruit and came up with this idea. It is a very easy and quick dessert to make and if you happen to have a audience while doing so, you are sure to impress them all!
Ingredients ( for 2 people)
6 apricots – stoned and halved
2 heaped Tbsp brown sugar
1 cap full vodka
1/3 cup white port
2 star anise
1 stick cinnamon
For the topping
6 meringues – I bought mine
8 chopped pitted dates
1/2 cup – chopped hazelnuts
Place a large skillet on the stove and melt the butter and the sugar until it starts to caramelize. Add the star anise and cinnamon.
Add the halved apricots – cut side down.
Allow the apricots to caramelize and then add the vodka and set afire. Let all the alcohol burn away and then add the port. Let the port reduce until you have a thick syrupy consistency – it took me about 3 minutes.
Whip the cream in the meantime and add the chopped dates and 1/2 of the hazelnuts. Fold into the cream.
Now spoon 6 halves of the apricots on a plate and pour some of the sauce over it. Crumble some of the meringues over it and keep one or two whole. Top with a dollop of the cream and sprikle with some more chopped hazelnuts. This dessert is delicious hot or cold.!!!
