Patatas Bravas……let’s have tapas!
My husband went on a business trip to Spain about two years ago and on his return very boldly announced: “We are moving to Spain!” The children went: “Yeah!!!!!” and I went: “What?????”.
After I have calmed down and got my breath back, I asked: ” Why love, did the company transfer you?” “No!” he said, “but I left my briefcase and laptop on a bus stop and when I returned 1/2 hour later, it was still there!
I want to live in a country where you don’t have to spend a big chunk of your salary each month on security!” I made us a strong cup of coffee and we had a long discussion about whether we should go or stay in South Africa, but I am happy to report that we are still here and happily so. We have a beautiful country and we are surrounded by friends and family whom we love dearly and that is not something to give up that easily.
While on his trip he was invited to many “tapas” style meals and he loved it. So when I heard this recipe on the radio yesterday morning, while I was driving, I decided to make it for supper last night. So, we had our own little tapas in our own little house , in our own little country!
about 1 large potato per person – peeled and cut into big chunks
1 medium onion – peeled, but keep it whole
1 onion – sliced
5 whole cloves
1-2 tsp smoked paprika
3 cloves garlic
2 Tbsp tomato paste
salt and pepper
1 chopped chili – optional.
Press the cloves into 1 onion and place the onion, potatoes and salt in a pot with some water. Cook the potatoes until soft, but not mushy. Heat some olive oil in a pan and add the onion, garlic and paprika.
Fry until onion is soft and add potatoes. Lower the heat and let the potatoes caramelize. Finally add the tomato paste and season well. Sprinkle with fresh herbs and enjoy as a light meal or add slices of pork smoked pork fillet.
