Spinach and Bacon Quiche

My son has a cricket match this afternoon and even though they only play 20 overs, it takes the whole afternoon. Cooking supper after all this, is just not going to happen, so I quickly made this quiche this morning. It is so simple. I have refined it to two steps, provided that you have the right ingredients.

Spinach and Bacon Quiche

 The Crust
Place the following in processor:

250ml flour
250ml strong cheddar cheese, grated
125ml soft butter
1 tsp dry mustard

Process until it comes together in a ball of pastry – rest for 20min(if you can).
Press dough out into a quiche pan.

The filling

250gr bacon pieces – fried in some olive oil
200gr spinach – I use frozen spinach that is available at most supermarkets
200gr feta cheese – crumbled
250 gr cream cheese
4 eggs.
125ml grated parmesan cheese.

Mix all the ingredients for the filling together and pour in pastry case and bake for 30 min at 180 degrees.  I served mine with a simple salad – roasted butternut, red onions, feta, rocket and little plum tomatoes.
