Steak and chips!!!

We, as a family, are very committed to our faith and are very actively involved in community work almost every night. Once a month we have, what we call a family night, where we just spend time together as a family and uplifting each other spiritually.
Every month a different member of my family gets to choose what the Meal of the night will be. This month it was my son, Christopher’s turn and he, without hesitation ordered: “Steak and chips, mom!!!”

My favorite steak has always been rump, because of the flavor. I know fillet always gets the vote, but although you are guaranteed tender meat, the flavor cannot compare with rump.

I like to keep it simple when preparing steak.

Ingredients for marinade

 fresh herbs (Rosemary, oregano and thyme) chopped finely
 zest  and juice of a lemon
1-2 Tbs olive oil

Toss all the ingredients in a ziploc bag and marinade the steak for as long as you can, but if you cannot wait long, 1/2 hour will do.

Heat your griddle pan till it is smoking and slap the steak on. Do not be tempted to try and turn the meat. If it is sticking to the pan, it is saying: “I’m not ready to be turned”. Add salt and pepper right at the end. When steak is done to your liking, remove from pan and let meat rest for at least 5-10 minutes.(this is very important)

Our steak tonight was done on a barbecue – In SA we refer to it as a “braai” (pronounced b-r-y, as in fry)

Serve with piping hot chips and a simple tomato salad.
