Cholesterol-"free " cheese cake.

Cholesterol Cheese Cake! Do you like the sound of that? It is not entirely “free”, but not too bad to have now and then. It is dead- easy to make and sets in no time. You can add any fruit you like or serve it with a coulis, just remember, if using pineapple, use the canned type as fresh pineapple will stop the cheese cake from setting because of the enzyme bromelain . By the way, as you can see, not a crumb of cheese to be found in this recipe, but people think that they are eating cheese cake .

Cholesterol Free Cheese Cake

For the crust

1 pkt ginger nut biscuits
50gr margarine ,melted

Crush biscuits and mix with melted butter(or blitz together in blender). Line the base of a springform pan.

Filling

500ml Dairy- free cream – I used Cremendous or Orley whip
1 tin condensed milk
1/2 tin lemon juice(use tin of condensed milk)

Whip cream until stiff.
Mix lemon juice with condensed milk until it thickens.
Fold whipped cream into this mixture.
Spoon into prepared springform pan and let it set for 30 minutes to 1 hour.
