Last night for supper, I was a bit pressed for time, but having sandwiches was not an option as we already had those for lunch. I found 4 cobs of corn in the fridge and here’s what I did….

Corn and Cheese Bake
Preheat oven to 180 C

4 cobs of corn, cooked and cut off the cob
4 eggs
1 cup cheddar cheese
1/2 cup cream cheese
1 heaped tablespoon chopped chives(optional)

Mix together with stick blender.
Bake for 15-20 min until slightly brown at the top.

I served this with steamed green beans and a small salad. The family loved it – the children added a little tomato sauce and in hindsight I also thought it needed a tomato salsa of some sorts.
