Everyone loves snacks, but despise making them, because it is just too much effort. A stop at the local bakery is usually the easy way out, but the result is a plate filled with soggy pies and tasteless sausage rolls.
I have a few snack ideas that are always winners and so fast and easy to make. Here goes ……
2 cups of mature cheddar cheese, grated
1 Tbs Dijon Mustard
1/2 teaspoon Cayenne pepper
2 Tbs Mayonnaise
1 Tbs chopped chives
1 tin smoked mussels
Cut a French loaf in slices and place a mussel on each slice. Cover with a spoonful of the cheese mixture and grill until golden and bubbly.
(You can omit the mussels and add 250 gr cooked bacon pieces to the cheese mixture.)
Bacon and cheese tartlets
3 cups mature cheddar cheese, grated
250gr bacon, cut in little pieces(not cooked)
2 Tbs chopped herbs eg. parsley, chives or basil
Mix the above and put spoonfuls into muffin pan. Bake until the egg has set and the tarlets are light golden brown.
Both these snacks are ideal for having friends over for drinks, but can also be served as a light lunch with a lovely green salad.
